When a film is rereleased on a new medium in a (commercial) act of ‘cultural preservation,’ it’s transferred to that format with greater detail that takes advantage of sharper display technology, not redesigned from the ground up with a different script and cast.
Outside of 4k remasters (which in most cases are a restoration of detail that was already captured on film), we simply accept that old movies just look like that, even animated movies. Nobody is remaking Toy Story every time there's a leap in tech. We just watch that movie. Why are games different?

The more loot that a looter shooter or ARPG showers me with, the less I like it. A small amount of meaningful loot is so much better than heaps I have to sift through to try and spot something good (based on criteria I'm making up and unsure of, no less). Thousands of tedious micro-decisions.

Like, did Ocarina of Time "automate" jumping in ways hostile to player experience or was it simply not interested in being a platformer/wanted to focus on other parts of its systems? And if the latter, why can't Vampire Survivors be a game about exploring Diablo's build path w/o ten billion clicks?

One reason why Batman: The Animated Series has had such lasting power is that it's very focused on what the villain wants. Not just in terms of the plot or the scheme, but how it reflects their innermost desires. The motivation has to come from some emotional well that the audience can relate to.
Poison Ivy starts a family in "House & Garden," a cool little horror tale that weaves deftly between creepiness and tragedy. One of the best examples of the fact that most BTAS villains didn't seek to destroy the world, but rather create the perfect one for themselves.
