Baten Kaitos legit got me with it's major twist, I'm thoroughly enjoying it. I'm even thinking of doing a Level 1 run after I beat it cause I've found the game mostly pretty easy aside from one boss fight in particular. I feel that kind of playthrough would make the mechanics shine more.

Gladiator Begins
Has a very satisfying "kill opposition -> take their stuff" loop.
Nice, chunky fighting with various weapons and styles to choose from.
I believe there are four story paths, so that's a lot of replay value for completionists.
