Minthe grew up in crazy cold mountains. For her, the cold is home and comfortable. Sure, sometimes she has to adjust to different kinds of cold, but overall she does better in it than the heat, even after all the years away from her village.

I think it’s very clear, Minthe is lovingly married at this point to Aymeric! They have frankly had eyes on each other since they first met, but both have also had a number of other partners before.
Minthe’s relationship with her mother wasn’t complicated per say, more that her mother was just a complicated person with a lot of responsibilities. She knew her mother loved her and her siblings, but she also knew she wouldn’t show it the same way some of the other mothers did.

Each expansion is about a year for Minthe, with ARR being about a year and a half.
Not all of them are exactly a year, and Shadowbringers stil has it's weird time stuff happening which is my personal explanation of why the twins haven't had their growth spurt yet.
