Rabbinic materials are a mixed bag and far from systematic. Benjamin Isaac's "The Roman Army in Judaea: Police Duties and Taxation" goes through some of the most immediately relevant ones. Papyri and inscriptions are a grab-bag, too. Though several decades later, there are lots of Kitos War papyri.

Are you asking about sources or about specific manner of treatment? And how long after are you thinking, because sources from the Kitos War in Egypt are extensive, but several decades after the Jewish War ended.
