I live too far from you to smell the hickory and/or mesquite smoke as it tenderly kisses stolen beef ribs. So no worries.

That’s another plus to smoking the pork. The 6-7 pounder I just did was around $10.

One tip I’ve learned is that if have multiple racks to your smoker, buy some good quality Italian sausage and put it directly under your butt/shoulder once it starts to render. The pork fat will baste the sausage and it ends up amazing. If the pork is for dinner, the sausage is a great lunch.

Pork shoulder is wayyy more forgiving than brisket. It’s just easier to do and have it turn out amazing. That said, brisket is the show stopper and when it turns out good you are the hero. When it’s overcooked it’s usually still really good.
