Fermented foods are good for you, regardless of culture or region. Avoid iodized salt for them (but use it in/pn food, lack of iodine will lower your IQ and cause health issues) use fine sea salt for your 3-5% brine ferment. Wash your hands and use them when making your batch. It’s fun and engaging.
