Last night's dinner was a gluten free peach and prosciutto pizza. It was a delicious mix of Italian cheeses, thyme, basil, balsamic vinegar, honey, prosciutto, and fresh peaches on a homemade thin crust.

I picked most of what was left of our garden lettuce today and planted some tomatoes in its place. Tonight I used much of it to make seafood Cobb salads. Mine had shrimp, my husband had salmon.

Tonight's dinner was an Irish style Mac and Cheese cooked in a sauce that included Irish Cheddar, medium Cheddar, and a local gf Red Irish Ale. It was topped with a garlicky toasted panko. With it, sausages and a salad dressed with a tarragon vinegarette.

I picked up a petite sirloin tip this week and we had it for dinner last night. After a ten minute rest it was a perfect medium rare (135°F). With it, homemade horseradish sauce, stir fried veggies, salad, and smashed Parmesan topped mini potatoes. Delicious.
