bakery test runs for fall/winter:

cranberry orange cake (needs a touch more cran; will macerate some so they don't all float to the top)

sugar cookie mini-sets (neighbors gave the idea of doing diff flavor cookies so now on the lookout for apple+pumpkin sugar cookie recipes)

juvenile hummingbird is learning how to adult at the zinnias in my backyard; happened to come by while I was outside looking at the flowerbed and spent a good few minutes w/ a hummingbird mere inches from my face 🤯

so the second loaf of the batch I made yesterday actually turned out pretty close to perf 🤷 attributing the diff of the 2nd one to being smaller and therefore cooled down quicker in fridge..?

nonetheless - today's attempt is looking rly good, here's hopin'

after consistently testing variables making sourdough this past week, a new, unexpected contender has entered the ring - fridge temperature

been using the garage drink fridge for cold proofing every loaf...just found out it's running at 47°-50° F 😩😩 fine for sparkling water, not fine for bread

batch of regular white sourdough boules in the oven, looked maybe overproofed when I turned 'em out of the bannetons - fingies crossed

if the bread turns out okay, delivering a half loaf of that plus some lemon cake to the new next door neighbors 😎

in the brown bags: whole wheat sourdough rolls, glazed lemon loaf cake, bacon sourdough boule

in the white bags: glazed orange loaf cake (packaged in slices per customer's request)

used ramekins lined w folded linen towels to overnight proof the rolls, v happy w/ results

previous rolls were kinda spready due to proofing in boule bannetons until this experiment - glad I can stave off buying mini bannetons for now

also found out my oven has been running cold by ~25° today 😩 idk when that started, but may explain the recent prevalence of lesser than stellar bakes in my life
