They're single measure, basically a big resistor. My objective was not absolute precision. I was going for repeatability mainly. There are ways to calibrate them if I want to, but I haven't found that to be necessary

Most likely a bit of both. What I found is that if you can pedal and see the pressure applied you can develop a feeling for what you need to do. And it's not so much about perfect circles, it's more about not pressing with both feet at the same time.
