I doubt he's very agile, so he probably has mostly anatomically red muscle with relatively little white, to support high speed cruising over sharp turns. It'd be like... an incredibly, ridiculously meaty tuna. Like maybe too meaty for most people, with a very heavy taste.

That'd be my guess. Given his anatomy and how his movement's portrayed from what I've seen, his meat's probably most comparable to a tuna, with highly vascularized, high-hemoglobin muscle just to propel his bulk because he's the size of a freakin whale shark, except one that can swim at high speeds.

...I'm not sure what the ecology of giant fishmen would be so first question is is he an open ocean fish or more coastal?
