Quit the boat in Strahan, they were moving my room and I didn't want anyone else to pack up my stuff and thought, fuck it, might as well bung everything in the car and put it on the ferry. Coopers Sparkling Ale is the most historically important Australian beer IMO, and it's really interesting being a derivation of a 19th century British pale ale where ferment characteristics from the house yeast strain are the dominant flavour.
It will however require a bit of research into strains I want to cultivate but I have a Brett strain earmarked and a Saccharomyces strain I want to cultivate (Cooper's house yeast).

I think when I get back into home brewing beer I might just run a multi strain house yeast with a bit of Brett in it. It's counter to common wisdom but most of what I want to brew is under-represented in the Australian domestic craft market British styles, mostly historically inspired.
