I've been using Enpass for years, I've been happy with it.

I have a big chain that's approved by my insurance company, that's as good as it gets in my neck of the woods.

E-bikes are awesome I hope you get to enjoy yours for years to come! But unless your uncuttable lock is locked to an equally uncuttable fixture they're just going to cut the fixture. what makes it worse is that most u-locks aren't large enough to fit around uncuttable things :(
