Iberico Pork Collar on cider braised potatoes and carrots

Picked up an Iberico Pork Collar from Costco UK and wanted to do something interesting.

Covered in Chuds Sweet Cheeks rub, laid over a bed of potato, carrot and sliced garlic in an oak matured Cornish Cider braise

Slow smoked for 4 hours.

Too long since I did Pork Belly burnt ends !
Matching SmokeyRebel CherryForce with Wazs Sauce Hut Sweet Embers Cherry Cola bbq sauce was just the excuse to get me making them again!! 😁

That mix of sweet and spice from WillyT's Cherry Force is explosive

Coated in Texas Sugar, smoked for a couple of hours on our Traeger Ironwood, then wrapped in a braise of Wazs Sauce Hut Island Breeze , Tropical Flame and Home Farm MK guajillo hot honey

I will never get bored of our house being at the turn point for the Battle of Britain Memorial Flight's flyovers of Bletchley Park.

Several times each year we get have their Lancaster and their Spitfires or Hurricanes fly low level loops down our garden.

So far, there is no difference between the two...

Probably the most complicated outdoor cook I've done 😲 and one of the most awesome meals I've ever made on any of my grills!!!

Bit of an experiment today.
My good friend Waz has recently reformulated his Cherry Cola BBQ sauce, so wanted to see how far I could push it.

Finally tried my hand at a Jamaican style #Chicken #curry.
(Originally going to be goat curry, but the goat chunks we got, ended up being 70% bone and didn't smell to great)
All cooked in an Lidl uk #dutchoven on our Aldi uk #kamado (yes I'm that cheap when I can be 🤣)

Joining the cool kids with my first Brisquetta.
It's like a #brisket only smaller.
Cooks the same way and to the same result but quicker.
It took a total of 4 hours at 225F, including 1 wrapped on a #traeger Ironwood cooked to 208F internal
