Also, the Rancho Gordo beans reliably produce a wonderful broth, which can be surprisingly hearty and delicious. I sometimes substitute chicken stock for half of the cooking water to deepen the flavor.

There are instructions on each bag of beans, as well as a short essay on their website from Steve Sando himself, explaining his approach. It is quite simple and practically foolproof. In my experience, the bigger the bean, the longer the cooking time. But two hours is about average without soaking.
