Before Endwalker it would change to whatever the main hub of each expansion would be, but since Endwalker it's been Old Sharlayan and will remain that way unless something happens that makes me reconsider

She just doesn't really care about healing, she'd rather be in the frontlines where she can prevent people from getting hurt in the first place.
She will bring her healing skills whenever they're really needed however, and for Dawntrail she does start out as Sage 1/2
