I've set up analysis diagrams for the configurator. and i can see the most frequently modified Enchantments.

I can also see the most modified datapacks and the proportion of players on the different versions, it's really interesting.

e.g 25% of players are on 1.21.1 in January

Yo! the configurator just got a big update. It supports a new datapack migration system, which will be available at the end of the week, allowing you to change datapack versions while keeping your configuration.
