It took about four hours total which, OK, maybe I need to take the altitude into account more. FWIW, I would occasionally see the simmer get up to 195 degrees. Anyway, today it is the breakfast of champions and it tastes amazing. For sure not New Orleans style, but inspired.

Cajun white beans is just redbeans and rice recipe with a bean substitute. I don’t think you can “bastardize” beans and rice.
