Made eggplant parmesan tonight.

Used an Allrecipes recipe as reference but really just freestyled the whole thing, including making the tomato sauce from scratch - roasted Roma tomatoes with olive oil and salt.

Sliced the eggplant sideways and used panko crumbs. Turned out tasty!

any one of these ingredients can be found in gumbo somewhere and i'm not a big believer in culinary "authenticity" but we need to consider what kind of downstream consequences we could face by entering an allrecipes gumbo into the legal record. also this judge is from massachusetts
