Cooked Mushroom Aviyal from @coconutlagoon_joe’s Coconut Lagoon—deep, earthy flavours with coconut and curry leaves. Not a looker, but it’s a winner.

Borrowed the book from library as I have looked for it everywhere (online, indie bookstores, publishers) but couldn't find it 😔. 🍜🍽️

Flashback to about a year ago during Onam celebrations in Kerala. I miss the food and friendly people every day. If only I could find aviyal here in Hawaiʻi.

Aviyal or avial, for me. It's a south Indian mixed vegetables dish. Usually has raw plantain, yam, melon, snake gourd, drumsticks, carrots, and beans, in a coconut and chilli paste. It's quite healthy, and supposedly a favourite at traditional feasts. Not a fan.

Except when using coconut oil to temper a good Aviyal , keerai masiyal ( spinach ) or mor koottaan ( a yogurt based South Indian curry ala Kadhi)

See, spring isn’t done with its celebration. For so many in India the harvest festival is their New Year - Puthandu, Vishu, Boishakh, Baisakhi, Gudi Padwa/ Ugadi. Pachadi, parippu curry, rasam, sambhar, Aviyal, pickles, payasam & of course, rice with a generous dollop of ghee served on a banana leaf

I never remember to garnish my kootu, kozhambu, and aviyal with nylon sev. So I make up for it by stuffing my mouth full of it numerous times in the evenings.

There’s something incredibly comforting about a warm bowl of veggies, but let’s be real—texture is everything. That’s why I’m currently obsessed with this Garden Vegetable Stew (or Aviyal, if you want to get technical!).
