Tomorrow is one of my favorites, Indian chicken chettinad! I'm gonna sous-vide the thighs in a variety of spices and coconut, all before cooking it down in a coconut milk masala and maybe even making some garlic naan to go with it. Yum!

I had a chicken chettinad (for the first time somehow) last month that basically blew my socks off (the addition of black peppercorns as a main player was a revelation); I thought I had explored everything when it came to indian curry but it's a huge and wonderful world out there
