From the pork loin that I cut up to economize yesterday. Haven’t had a chili Verde burrito in a long time. Used part of the pork loin to make it. You can’t make a burrito without making Mexican rice.

This picture shows the whole burrito on the plate with the wheat motif  The pork loin meat in the pot with the green tomatillo sauce. Spicy with just the right amount of kick. Mexican rice from scratch.

Dinner last night was chili Verde turkey enchiladas with Mexican vegetable mix. For dessert, strawberry shortcake with homemade whipped cream.

Made myself a burrito out of the leftover “Everything Fried Rice” & pared it with a pork chop that I cooked in Chile Verde sauce
On my southwestern patterned placemat, I have a white oval plate. On the plate sits a burrito that I made with the leftover everything fried rice. Also on the plate is a pork chop that I cooked in chili Verde sauce. I would definitely do this again.
