fun fact! milton hershey had ZERO experience with chocolatemaking when he founded hershey's. he made his recipe on the fly. growing up i was told he fucked up the process with the milk somehow and thats why american choclate tastes like that

Interestingly, no poorly tempered or bloomy bars, the two kinds of defects I'm most familiar with, but I think they were looking to show us the kinds of flaws that are introduced earlier in the chocolatemaking process.

So just a general summary… read on if you’re curious.

We learned a lot about defects and off notes. And by “learned” I mean “tasted,” by which I also mean “suffered.” But it was useful! Major takeaway: shit can go wrong at every single step of chocolatemaking, and there are a lot of steps.

Made a new batch of chocolate. This time it got a bit too much vanilla. Not a bad amount, just a bit much. Quite pleased with the results though.

This mold is really satisfying to use.

All new molds, the leaf shapes are really good, they're thin enough to have a good mouth feel but thick enough to not break in the mold. The dinosaurs are just a bit too thick. The bars are really good but a couple broke in the mold. I love the little cacao pods on them.
