I used onion and shitake as well. We have this almost weekly. It uses only 200 grams of sliced beef, so it's a nice treat that doesn't break the bank.

Asian groceries usually carry it. It’s koya dofu (and it’s an OLD recipe). It’s also the tofu that comes in instant miso soup packets (though that’s coming with miso, seaweed flakes, etc.)
