You may have noticed that Georgian ejective /p'/ in khachapuri just goes to French <p> /p/. Interestingly, names printed in the book use <th> for Georgian /tʰ/, thus distinguishing it from /t'/, as in the author's name, Kéthévane, or the names Datho and Thémo in the dedications.
