Grilled a rack of lamb and had it with a nice persillade. Served it with an Urby couscous with tomatoes and toasted pine nuts. Not pictured, was some quick pickled cucumbers and red onions. #DinnerAndASong.

Leftovers tonight. Made some Nutterbutt stuffed tortelloni back in the fall and froze them. Cooked them up and paired them with Sunday nights red pepper sauce. Grilled some corn and threw that on top. #DinnerAndASong

Dinner tonight was surf and turf. Sous vide then grilled ribeye with scrimps and a low-carb pasta. 🦐 and the pasta were tossed in a nice roasted tomato pesto, of which @maithedane.bsky.social would be proud. Not pictured, a nice garden salad.

Harissa mushrooms with Spanish chorizo (see picture one in comments), and a Philo dough nest then topped with an egg and some TJ‘s Iberico cheese. Stmd carrots and broccolini tossed in a lemon vinaigrette with Dukkah, shallot, garlic, and Fresno pepper.

Sous vide ribeye finished on the grill. Caliphs lathered in a mixture of Greek yogurt, spicy harissa paste, and lemon juice then roasted until tender, but with just a little bit of bite left. Water cross lightly dressed in lemon and olive oil. 🤷‍♂️

Paella inspired dish of chicken thighs, Spanish chorizo, peas, and black olives with rice. Rice cooking liquid was chicken stock with tomato paste and mild pepper paste whisked in. Seasoned with onions, garlic, S&P, saffron, and parsley. 🤷‍♂️
