The Trump admin fired 500 people from the Food Safety Inspection Service (FSIS) and 1,300 from the Animal and Plant Health Inspection Service (APHIS). Both agencies are under the USDA and share responsibility for re-inspecting imported meat products.

If you don't have a calibrated sous vide precision circulator, the FSIS 5-log and 7-log reduction charts memorized, and the knowledge of which to use for which meat, everything should be cooked to an internal temperature of 165F. But especially poultry!
Okay, this one is legit terrifying.

DO NOT COOK CHICKEN TO 102° F.
Chicken must be cooked to 165° F by conventional cooking. If it’s starting to burn on a grill or in a pan, you can immediately transfer it to a microwave and finish cooking with steam, or you can parboil the chicken before grilling.

The Class I recall says that the products have a false USDA mark of inspection.

The FSIS describes a Class I as involving a health hazard "where there is a reasonable probability that use of the product will cause serious, adverse health consequences or death."
