It is time for my #FridayCabernetfix. Inky in color with a short purple rim. Strong nose of black fruits with light cedar, earth, herbs, toast, mediterranean spices, black pepper, herbs and black tea. Full-bodied with medium acidity and long legs. Dry on the palate with blackberries, black currants, plums, cooked cherries, spices, cedar, licorice, chocolates, herbs, coffee, light earth, tobacco leaf, black tea and light peppercorn. Long finish with fine grained tannins and tangy cherries. This is a gorgeous Cabernet Sauvignon from Napa Valley. Rich and fruit forward, nicely balanced with a nice mouthfeel. Complex and engaging. Still young, and needs a few years in the bottle to mature properly. Will continue to age nicely in the next 15 years. Has good potential to become a 96+ point wine. Needs 3 hours to open up properly, so be patient. I had the 2018 vintage 5 years ago, and this 2021 vintage is showing so much better already. Wine Advocate 98 points. A great sipping wine that will also pair nicely with a big piece of steak. 14.9% alcohol by volume. 94 points. $200.

Terralsole Brunello di Montalcino Riserva 2007, Tuscany, Italy #AgedWineTuesday Dark ruby in color with a wide brick rim. Strong nose of black fruits with light wood, forest floor, earth, spices, tobacco leaf, dark coffee, herbs, rhubarb and light black pepper. Medium plus in body with medium acidity. Dry on the palate with black currants, cooked black plums, light oak, Indian spices, herbs, tobacco leaf, black tea, licorice, earth, black pepper and light forest floor. Long finish with fine grained tannins, tangy cherries and marzipan notes. This 19 year old Brunello is still drinking beautifully, although a tad past it peak. Nicely balanced with great complexity. Elegant and soft. Stinky nose right out of the bottle, and showing lots of earth notes, but the fruits are still there. Wine Enthusiasts 94 points. Robert Parker 91 points. Good right out of the bottle, and better after 90 minutes of airtime. I've had a few vintages of this wine and it is very consistent. A very interesting wine, and very enjoyable by itself or with food. 14% alcohol by volume. 92 points. $125.

Shafer Vineyards Hillside Select Cabernet Sauvignon 2021, Stags Leap District, California It is time for my #FridayCabernetfix. Dark ruby in color with a wide reddish rim. Strong nose and full bodied with medium acidity and long legs. Dry on the palate and already very complex. Showing black fruits with cedar, vanilla, leather, light earth, chocolates, tobacco, spices, peppercorn, coffee, cola and licorice. Long finish with fine grained tannins and tangy cherries. This young Cabernet Sauvignon from Stags Leap District in Napa Valley is already drinking beautifully. Rich and extracted. Fruit forward, elegant and nicely balanced. Soft and smooth. In your face kind of wine, with a teeth staining color. Bold and beautiful. The high alcohol is still noticeable, but will integrate with time. Good right out of the bottle, and better after a few hours of airtime. Will continue to age nicely in the next 15 to 20 years. Showing good potential to become a 95+ point wine. Wine Spectator 93 points. Robert Parker 99 points. Wine Enthusiasts 97 points. A great sipping wine that will also pair nicely with a big piece of steak. 100% Cabernet Sauvignon grapes were aged for 28 months in all new French oak barrels. 15.5% alcohol by volume. 93 points. $300.

It is time for some Merlot on this #MerlotThursday. Let's bring Merlot back! Dark ruby in color with a short reddish rim. Pretty nose of black currants, black plums, cherries, light cedar, licorice, chocolates, black pepper, black tea, herbs and spices. Medium plus in body with medium acidity. Dry on the palate with black plums, cooked cherries, currants, light oak, spices, chocolates, light black tea, licorice, herbs, coffee, tobacco leaf and black pepper. Long finish with fine grained tannins and tangy cherries. This young Merlot from Sonoma County is already drinking beautifully, but needs a few more years in the bottle to mature properly. Fruit forward and very elegant, with nice complexity and a soft mouthfeel. Spicy, tangy and entertaining. Feels like a Right Bank Bordeaux. I've had an older vintage of this Merlot not too long ago, and it was drinking even better. Will continue to age nicely in the next 25 years. Has good potential to become a 96+ point wine. A great sipping wine that will also pair nicely with food. A blend of 90% Merlot, 6% Cabernet Franc and 4% Malbec. Aged for 16 months in (95% new) French oak barrels. 14.1% alcohol by volume. 92 points. $500.

Does an expensive wine taste underwhelming? Check its temperature before you judge it
A costly bottle can seem muted because of expectations or the way it is served. Before judging it, check the temperature and see how it changes in the glass.
