(the animals domesticated in situ by Proto-Afro-Asiatic herders) became the dietary baseline, while non-ruminants were coded as impure by contrast. The rules, in other words, reflect which animals they already raised, not universal hygiene logic.

The discussion of my class today on Food Anthropology Japan was very cool. The whole conversation was about the ways in which the Japanese resignify the notions of fast food and McDonald’s itself in the country. Very fun, I really like these moments.
