Pomelo chili marmalade. Boil sliced skin & pith of 1 pomelo 2x in fresh water till pith is translucent. Rinse until water no longer runs greenish. Place in heavy pot w 2 sliced chilis. Cover w sugar then water. Stir. Cook med heat, not stirring, til 220F. Remove from heat. Cool. Bottle. #FoodIsGood

First meal in the new home, to celebrate actually having managed to move in: Black cod w soy sauce/ginger glaze; shredded hearts of palm; beech mushrooms, snow peas & Brussels' sprouts stir-fried in butter and creamed coconut. #FoodIsGood

Brussels sprouts grow on a very tough, woody stem— which means workers need both strength and precision to avoid chopping injury.
