I used to use SwiftKey which does use your typing to build a local model but also has an "incognito" button to stop listening. Now I use GBoard. If you look at the gboard help support.google.com/gboard/answe... it says it stores "transcripts" on your device?? Sorry *what*?? How is that a good idea??
