For my birthday, the kids came to my shop with Hiromi. I made ridiculous oversized burgers (163g), some with smoked bacon (plus one veg version with ganmodoki). I was testing some roasted potato and soufflé sweet potato recipes in my commercial oven, and everything but the chicken ended uo as sides.
Burgers with Australian beef, optional bacon and processed cheddar, sometimes tomato, sanchae lettuce. Mine with a thick ganmodoki, lettuce, tomato, process cheddar, yuzu kosho, soy sauce. Roasted 1kg chicken, roasted potatoes, roasted sweet potato soufflé Sweet potato soufflé

Oden started as tofu on a stick. The name is short for "o-dengaku," the miso-glazed skewers of the Edo era; the simmering-in-dashi version came later.

Now it's the smell of autumn: daikon, egg, hanpen and shiitake stewing for hours until the broth does the work. The mustard is not optional.
