I made honeynut squash tonight and it's my new favorite. The kids accepted a few bites, even! Going to the farmers market tomorrow to pick up a bunch more.

I was going to go extremely easy on the food but at the last minute I remembered that I had an extra honeynut squash I needed to use and savory tart happened

The honeynut vines are taking over the whole garden. Sprawling every direction like they can’t decide if they want to climb, crawl, or coil into weird little sculptures. Never grown before.

▪️2 TBSP white miso, at room temp
▪️1 ½ TBSP apple cider vinegar

▪️1 heaping TBSP organic brown sugar
▪️3 garlic cloves, grated or minced
▪️¾ to 1 cup (180 to 240g) Whipped Tofu

🌱 Today’s harvest. Sooo much okra…gumbo tomorrow.
There are maybe 8 more squash on the vine that are all pretty big, the ones that ripened first were small even by honeynut standards so they’ll get gradually get tossed into risotto or something.

Oh and you can obviously make a full sheet of these with two honeynut squashes, we just had three people over for dinner and that was it.
