I think that extending personhood is more a moral question than an ontological question. Accordingly, the thing that would actually convince you would be interacting with an agent and seeing how it feels, á la Levinas — looking for its Face.

Das Gegenüber darf nicht einfach zu jemandem verkümmern, über den ich Informationen sammle. Die Begegnung mit dem Anderen stellt meinen eigenen Standpunkt infrage und begrenzt meine Freiheit. Der Andere unterbricht meine Selbstgewissheit.
