Grilled cheese sandwich with peaches and black pepper.

Cheddar works best as its sharpness complements the sweetness of the peaches beautifully, but all I had to hand this time was some Boursin and a stub of Emmental, and they're just as delicious for a milder flavour.

Tom kha: Thai galangal and coconut milk soup. Traditionally made with chicken (tom kha gai; gai = chicken), this one is made with a medley of mushrooms: oyster, king oyster, and white shimeji, so is a _tom kha hed_.

I'm out of coriander/cilantro, which makes me very sad. Ah, well.

Clinging to the last of summer. Caprese plus avocado. Emphasis on 'plus', as it's of course not part of a traditional Caprese salad, but does add nutritional, textural, palatal, and visual value alike.

I made laab again. 😋 It wasn't planned as such, but I'm now calling it a small and much belated Songkran celebration. If merely to distract myself from certain heinous developments in the UK today.

Again, mine is vegetarian and is a _laab kua_, the pan-fried, northern Thai version.

Time to make this again. Crispy chickpeas with spiced peaches & charred red onions. From a recipe by Justine Doiron. A little Maillard Reaction seems appropriate on the hottest day of the year.
