Camelids (camels, llamas, alpacas, et al) are not ruminants. Their stomachs have 3 chambers, not 4 as ruminants do, with no division between omasum and abomasum. They are correctly classed as fore-gut fermenters but not ruminants despite having a rumen. Weirdly ruminants are bovids (not bovines)

Ruminants (yaks, goats, giraffes, camels) have a giant fermentation vat at the start of their digestive system.
It’s great at working *with* gravity but super terrible at keeping things down when gravity is not in their favor.
For this reason, I do not recommend taking yaks to space.

The four compartments of a cow’s stomach are called the rumen, the reticulum, the omasum, and the abomasum. Reticulum is thought to be the origin of the word reticule, a small, sometimes netted, drawstring bag carried by women in the early 19th c #dresshistory

Reticulum = eRie
oMasum = Michigan
AbomaSum = Superior
and hUron is de udder.

Like cheap cuts are delicious if you know how to fix them but two things:

1) they stop being cheap when everyone buys them, and

2) This motherfucker gave himself a brain worm I’m not listening to him about my food on principle.

Their names (left to right) are probably ‘Rumen’, ‘Reticulum’, ‘Omasum’ and ‘Abomasum’.

Named after the 4 compartments of the Bovine digestive system which metabolise the shit out of Bovaer (minus the methane).

The omasum is completely redundant. Oh you can absorb water? The colon does it better. You can filter particles by size? The reticulum does it better.

The reticulum is also boring tbh but at least it can get hardware disease! The omasum doesn't even get any fun diseases

Here’s why omasum is such a pain;

* like most organ meats there’s prep, in this case boiling
* ideally you want to marinate it for 24 hours
* you want to steam it for 6 minutes. Less and it’s not cooked, more and it’s a tire

OK if you’re a restaurant cooking lots of tripe, but doesn’t scale down.
