Trofie for #pastasunday
I’m trying to manifest an end to summer by savaging the basil for pesto.
Semolina on a countertop, formed into a ring to hold back some warm water. This dough is about 45% hydration (if we’re being careful, which I was not) Blending the water into the semolina with a fork. I do just enough mixing here so it’s not gonna run off the counter, then get after it with my bench scraper until it’s generally uniform. Thoroughly kneaded pasta dough, ready for a quick rest. And at the other end, trofie! These are little spirals of pasta, made by hand, drying on a linen cloth until we’re ready for dinnertime.

Broke out my grandmother’s classic Ampia pasta machine for tonight’s #pastasunday. It was fettuccini carbonara - delicious, but just looks like a dog’s breakfast unless you are a professional food stylist.
A classic Ampia pasta machine from the early 80s. The modern versions look exactly the same.

Threw together some fettuccine noodles and a boiled chicken for #pastasunday. This one’s a family favorite - the proper ratio is NOODLES and then Chicken and then just enough .broth. to keep everything together
