When your Hobart AM15 commercial dishwasher fills with water but doesn’t begin the heating cycle—or displays a low water error—the issue is often linked to a defective float switch and probe assembly (00-289121). This essential safety component monitors water levels and ensures the heating elements activate only when the correct level is reached. If it fails, the system may block heating to prevent internal damage, which can impact both cleaning performance and operational efficiency. In this video, you’ll gain a clear understanding of how this component works and why it commonly fails. Over time, mineral deposits, detergent residue, and grease buildup can cause the float to stick or send inaccurate signals. As a result, the dishwasher may misread the water level and prevent the heating cycle from starting. We walk you through the most common warning signs, including low water errors and lack of heat, so you can quickly diagnose the problem. You’ll also learn exactly where the float switch and probe assembly is located inside the wash tank, making it easier to access during maintenance. The step-by-step guide demonstrates how to safely replace the faulty assembly. From draining the tank and removing strainer pans to disconnecting wiring and installing the new component with a proper seal, each step is explained clearly. We also show how to test the float movement and verify that the heating cycle is restored after installation. By following this guide, you can confidently handle the repair and keep your dishwasher running efficiently. Watch the full video for expert tips and practical guidance to maintain peak performance in your commercial kitchen equipment.
