another round of quickbreads, much better, very edible and tasty but need some work on the texture (needs softness and some binding):

This came out quite good, actually. It's my "when you've only got one banana and you can't find your loaf pan" easy Greek yogurt banana bread, adapted from a 5 ingredient Greek yogurt bread I found online.
Toasted, with some cream cheese, it will make for a lively breakfast!

Even though it's the day before I leave for Otakon, there is much for me to do today. A waxing appointment, a trip to HPB, grab a few odd grocery items, make a couple of quickbreads and throw together a meat & cheese platter for Game Night this evening, tidy here & there...busy busy.

Casual bakers, get a dough whisk. They're inexpensive and the ideal tool to bring together thick batters and soft doughs like scones, US-style biscuits and quickbreads. It's pretty difficult to overwork doughs with them, too, so no worries about making things too tough.

They don’t keep and are annoying to process but the puree freezes well and works in quickbreads and custards.

Can't do soggy bread (French onion soup? Never!), cooked fruit (incl. tomato) unless it's down to jam/sauce, pork belly, all on textural accounts. I dislike pancakes & waffles, whipped cream, cinnamon, the combination of banana & chocolate, banana quickbreads, can't eat a warm dessert.

People rip on American cuisine, but there's a lot going on that's not even borrowed or "melting pot" culture. Quickbreads are a stand out example. They were invented in the US and the variety throughout the Americas is truly staggering. So many delicious types of quick bread. So good.
There is apparently nothing like a Southern US Buttermilk Biscuit in Europe.
It's flaky, savory, fluffy quickbread, with butter cut into it so that it tends to form layers. It's its own texture, not really comparable to a scone, and nowhere near an English Muffin.

My bread machine enabled me to make pizza dough, bake bread and quickbreads after years of not being able to do so because of my disability. Sure, I spend more time "baking" than I used to, but I get a lot of homemade goodies to eat that I couldn't make before.
