Please make sure that your GPU hardware supports the video codec you want to use; otherwise you will have to fallback to CPU encoding, which is slower than hardware encoding.

I uninstalled the drivers before transferring the hard drive to prevent any conflicts after I moved the installation, but it's a moot point because I was forced to reinstall anyway.

You can probably find a cheapish server out there as you don’t need much and start even with cheap refurb 250GB drives.
One with Intel Quicksync, you don’t need a GPU for transcoding but even a GT710 will do fine.

This is a Sony Anycast Station AWS-G500HD from 2007. It's essentially a Sony luggable PIII 933Mhz PC that runs Linux 2.4.20 with a ton of FPGAs to do the heavy lifting of a video switcher. Plus glorious physical buttons, faders, dials, and removable keyboard. And a jog wheel.
If you have limited storage and your devices have AV1 decoding it could be worth it. I've done NVENC and Quicksync and they're both fine using Handbrake.

Plus the Intel integrated graphics have QuickSync for media rendering, and they still kick AMD's ass in that regard.

The old LTS kernel I was running didn't support QuickSync, but the newer kernel also had issues with my NIC
I battled it for two hours and got it all working :) :) :)

I used to spread raspberry pi's around as boxes to tinker with, but honestly, at the current price point, a mini-pc makes a lot more sense.

TrueNAS 25.04.1 QuickSync in Jellyfin works out of the box. NPU is missing firmware (hopefully soon?).
Added 3 old (power hungry) SSDs for a test pool.
Idle: 38W at wall
Transcoding (HEVC to AV1): 65-70W
Serving the transcoded video: 40W
