One of the earliest known recipes for a root-based beverage was published in 1866 by Charles Elmer Hires, a Philadelphia pharmacist. Hires‘ "Root Beer" was made from a combination of sassafras root, vanilla, and other spices, and quickly gained a loyal following. According to historical records, Hires‘ root beer recipe contained over 25 different ingredients, including sarsaparilla, wintergreen, vanilla, and various herbs and spices. The popularity of root beer soared in the late 1800s, as soda fountains and drugstores across the country began serving up this refreshing, non-alcoholic alternative to traditional alcoholic beverages. By 1893, there were an estimated 3,000 soda fountains operating in the United States, with root beer being one of the most popular offerings.
