Ok, Got everything figured out. Honestly it took like 20 minutes for the whole install. The missing hard drive just needed to be partitioned, and I had my VPN set to DNS block social media 🤦.
Pop OS feels super snappy and intuitive. I should have done this ages ago. #ScrewMicrosoft

So a couple of things, everything seems to be working pretty well straight out of the box except it's not recognizing my second hard drive, and for whatever reason I can't access Blue sky on the browser
