Zundo-ya opened in our neighborhood last year. It's an Ippudo competitor, but with the seabura jacked up a bit more, which I like. There was a NYC satellite at one point, but at the moment the four shops in Shanghai are the only ones outside Japan.

Ramen Ryoga (らーめん 凌駕) is a local neighborhood #ramen shop almost next to Ookayama station (大岡山駅). They provide the locals with a large variety of ramen, all based on tonkotsu pork bone broth. Their points of pride are their chashu and the free seabura pork back fat to any bowl.

那覇・銘苅にある「麺や偶 もとなり 本店」で限定の背徳黒醤油ラーメン 卵黄あり(1,050円)をいただいた感想レポートです。たまり醤油のようなこってり醤油味に幅広麺、そして大量の背脂が特徴。三枚肉も入り、生姜がほどよく味をまとめています。クラッシュニンニクや紅生姜を加えて味変も楽しみ、中華料理を思わせる甘辛味と大量の脂が印象的な一杯でした。
