Today’s breakfast is the very unapologetically Filipino, ‘Longsilog.’ Longganisa (sausage), Sinangag (garlic fried rice), Itlog (egg).

Friends I wish I could share my lunch with you. (it's a rice bake with sinangag on the bottom, fried tocino spam, furikake, green onions, kewpie mayo, and sambal. It's supposed to have egg but today is not a egg eating day in my brain.)

No, THAT is DEFINITELY sinangag! A lot of people think Sinangag is just garlic fried rice, but sinangag came from the word ‘sangag’ (pan-toast or reheat)/isinangag (reheated). You reheated your rice with a bunch of yummy stuff and a loooot of garlic, so you made sinangag! •ᴗ• It looks lush, btw!!!

Thank goodness we'll have eaten all this sinangag before my summer in-person week, cause the garlic definitely sticks with you. ;)

A genre of filipino food that you see online a lot is "Silog"- it used to be "tapsilog", tapa, sinangag at itlog- grilled beef, fried rice and egg- but people dropped the "tapa" because a lot of canteens started selling fried rice and egg with any protein of your choice-

Okay I'm sure that @seokjinzero.bsky.social and @sgmnyg7.bsky.social and @aftskoolou.bsky.social might tell me this isn't sinangag because I threw in a pile of pork cottage roll but it's sinangag inspired rice and it's so good and yes there is a whole head of garlic in that bowl
