Enchiladas Suizas (Creamy Enchiladas Verdes)- We used Cannellini beans instead of chicken.our grown-up son did the whole meal including clean-up. Recipe in the first comment.

I'm using up some of the massive amounts of birria I made to put into enchiladas, with a suizas sauce! It's quite nice.

They also do a real nice mole coloradito, enchiladas suizas, chiles en nogada…and mezcal cocktails. And there’s a great outdoor patio.
