Btw here’s an example of a road bike modified for upright comfort. The Technomic stem is tall and short with upright handlebars featuring a lot of sweep. They’re way above the saddle so you can have a nice upright seating position. Ignore the shifter btw lmao… just experimenting with something.
A 1964 Bianchi Specialissima, rust red. Short brown Brooks saddle, tall stem with tall swept back Velo Orange bars and cork grips.

you can also adjust front/back position of the saddle on the post and of course the angle of the saddle. For the handlebars and stem, you can find stems in many different heights and lengths (I like Nitto Technomic for a lot of adjustable height) and there are a lot of handlebars (cont)

Did you follow the link included for “fast-casual?” Because it sure looks like Culver’s fails the majority of those definitional criteria.

Get an old steel bike, something like this. This kind of stem (quill) makes it easier to get the bars high. Have a shop take a look at the bike and ask about a nitto technomic stem. Shouldn't be a huge investment that you'll feel bad about of you don't like it

I've been enjoying this Bianchi, but today I put a Brooks on it, and now it's incredible. I also added a bell to the stem. It's not quite a dirtbag Rivendell, maybe more of a dirtbag Crust. The triple crank is overkill, might cobble together a compact double. Here it is earlier today, and right now.
