I got Hitmontop in Pokémon LeafGreen on my Switch 2 today! It took FOREVER to evolve Tyrogue into Hitmontop because you have to get its Stats just right.

Tested to see how FRLG's pre-nat dex evo block works & it's not just select mons. It stops ANYTHING from turning into a non-151 Pokemon, even if it already is a non-151 Pokemon itself.
BUT will allow non-151 mons to evolve into a Kanto mon.

No sé si Eevee es lo más representativo para pokémon, pero creo que si Eevee hubiera sido la mascota tendríamos la posibilidad de deevolucionar como pasa en digimon y poder cambiar la evolución de Eevee (y de Tyrogue, Applin, etc.) a voluntad. Con Pikachu solo nos han dado pikaclones que meh.

pardon my surprise info dump - but if you want to do a shiny hunt that represents Missingno, you could technically choose from a set of gen 2 pokemon (some of which are also birds;) a lot of the common missingno/glitch mons have corresponding gen 2 pokemon
