An infographic titled "WILD VENISON | Good for you, great for nature" set against a rolling green Scottish landscape, comparing four deer species with illustrations and text labels. From left to right, the featured deer are: * **Roe Deer (Native):** Smallest, weighing 10-30 kg, labeled with "Short antlers." Described as Scotland's most widespread deer with a "Mild, fine-grained, almost sweet-tasting venison." * **Fallow Deer (Naturalised):** Medium-sized, weighing 35-70 kg, shown with spotted fur and labelled with "Palmate antlers." Described as "Not too 'gamey' and slightly nutty." * **Red Deer (Native):** Largest, weighing 70-200 kg, depicted with large branched antlers. Described as providing 75% of Scottish venison with "The most robust and richly flavoured venison." * **Sika Deer (Invasive Non-Native):** Medium-sized, weighing 30-70 kg, shown in the background with labels "Pale frown line" and "Yellowish rump." Described as renowned for a beefy taste with higher fat content. The right side features a brown panel explaining how sustainable deer management supports Scottish habitats. It includes "Top Tips for Venison Beginners" (such as pairing with wild mushrooms or red wine, and letting the meat rest after cooking) and a QR code in the bottom right corner to "Explore Scottish Venison."
