Made eggplant parmesan tonight.

Used an Allrecipes recipe as reference but really just freestyled the whole thing, including making the tomato sauce from scratch - roasted Roma tomatoes with olive oil and salt.

Sliced the eggplant sideways and used panko crumbs. Turned out tasty!
