Karadeniz mutfağında genel olarak baharat olmamasının nedenini, bölgenin baharat yolu güzergahında bulunmamasından kaynaklandığını düşünüyorum. Ama iyi de baharat artık her yerde. Gel gör ki gelenekler alışkanlıklar kolay kolay değişmiyor galiba..

We bought a whole lamb from a local farmer, so I'm learning new lamb dishes. Tonight is Qouzi ala Timman: Iraqi braised lamb shanks with baharat, lemons, raisins. 10/10 do recommend. The 16 yr-old declares it, "super frickin' good." #locavore
