Made another classic Ethiopian dish. Shiro (ground chickpea stew). Since I already had the berbere spice mix!! And had besan flour aka gram flour aka chickpea flour. This is a very good dish. Hearty. Tasty. Onions, lots of garlic, tomatoes, berbere spices, all simmered forever

Oh my. This is turning out so well. Doro Wat with homemade berbere spice mix and homemade niter kibbeh (clarified spiced butter!). 3 yellow onions pulsed in processor then simmer with the butter for 45 minutes; add minced garlic & ginger plus more butter. 20 more minutes. Add A LOT of berbere spice.

Just one more thing and then I promise to shut up. This is a picture of berbere from Whole Foods on the left, and berbere from our local Ethiopian grocer on the right. The picture isn't great, but hopefully the color difference is obvious... and the flavor is too.
